Fried scallop with “risotto” of soaked and then roasted pine nuts, North sea crab, toasted ham and cheese “sandwich” (croque monsieur) and cream of sea coral, make up of the orange part of the scallop, brushed on the plate like a piece of art
Virtual minestrone soup, clear soup with 3 balls (the size of quail eggs), made of fluid celery, carrot and parmesan cheese (the sensation is the same as eating a half cooked egg)
“Spaghetti” of mushrooms (texture like glass noodle), terroir, nutmeg and rosemary. “essence of forest perfume” sprayed on the dish like it was a woman
